Washed Arabica Green Coffee Beans You Can Roast Your Own Way

If you want washed arabica green coffee beans that are clean, sweet and easy to roast, this lot is a good place to start. It is a hand-picked, single-origin Arabica grown at around 2,227 metres, washed at origin and dried slowly on raised beds. You get the raw beans. What happens next is up to your roaster.

We sell these washed arabica green coffee beans in six bag sizes, from a 1kg bag for a first test roast to 50kg for a café or a small roastery. Every size comes from the same harvest, so the coffee you sample is the coffee you scale up with. You can see every coffee we stock or carry on reading for the detail.

What You Are Actually Buying When You Order Washed Arabica Green Coffee Beans

Green coffee is the seed of the coffee cherry after the fruit has been removed and the seed dried. It is not ready to drink. It has a grassy smell, a hard texture and almost none of the flavour you associate with coffee until it is roasted. Buying washed arabica green coffee beans means you control the roast, and it also means you pay for coffee before anyone else has added cost to it.

These washed arabica green coffee beans are a single lot. They are not blended with other farms or other regions. The farms are smallholdings in the Oku and Ijim highlands, where coffee is grown in small plots alongside food crops. Pickers take the ripe red cherries by hand, which is slower than strip picking, and that is one of the reasons the lot sorts cleanly.

Why the washed process matters here

In a washed coffee, the skin and fruit are removed before the seed is dried. The beans then sit in water for a fermentation step that loosens the sticky mucilage, and are washed clean. A 2024 paper in Fermentation describes the washed method as selective harvesting, flotation, pulping, underwater fermentation, washing and drying, and notes that the fermentation stage is a key factor in flavour.

In the cup, washed arabica green coffee beans usually roast up cleaner and brighter than naturals from the same area. There is less fruit-driven funk and more of the coffee's own character. For this lot that means cocoa and nuts at the base, a citrus brightness on top and a sweet, lingering finish.

Why High Altitude Shows Up in the Cup

About 2,227 metres is high for any arabica. Cooler nights at that height slow down how fast the cherry ripens. Researchers who measured beans grown at three altitudes on Gorongosa Mountain found that going from 650 to 935 metres added about four weeks to fruit maturation, and that altitude was a major driver of improved bean quality (Cassamo et al., Agronomy, 2022). Bean density and size also went up at the higher site.

A separate study of green arabica from 20 growing zones linked higher, cooler sites to heavier beans and more fat, sucrose and trigonelline, and found that pH fell as altitude rose, which fits with the brighter acidity people expect from high-grown coffee (Beverage Plant Research, 2024).

Altitude is not the whole story. Variety, picking, processing and storage all matter, and we wrote about that honestly in our piece on altitude and flavour. But a dense, slow-grown bean is a good starting point. In practice, dense washed arabica green coffee beans take heat steadily and give you more room to shape the roast.

Who These Washed Arabica Green Coffee Beans Suit

Home roasters

If you roast in a popcorn popper, a pan, a drum on the hob or a small electric roaster, the 1kg and 5kg bags make sense. Forgiving, dense washed arabica green coffee beans are easier to learn on than a delicate natural, because they show mistakes clearly without punishing you too hard. You can run several batches at different roast levels and taste what changes.

Small-batch and micro roasters

If you are building a single-origin menu, the 10kg, 15kg and 25kg bags give you enough to dial in a profile and keep it on the shelf. Washed arabica green coffee beans with chocolate and citrus notes tend to work across filter and espresso, so one lot can cover two menu slots while you test demand.

Cafés roasting in-house

The 50kg bag is meant for steady weekly use. If you need more than that, or want a standing order, our wholesale green coffee beans page explains how bulk quotes work.

How to Roast Washed Arabica Green Coffee Beans

There is no single right roast. These are starting points, not rules. Write down what you do, change one thing at a time and taste each batch a day or two after roasting, once it has rested.

Light roast for filter

Take the beans just past first crack and drop them shortly after it finishes. You should get the citrus and fruit up front, with cocoa underneath. This is where high-grown, washed arabica green coffee beans tend to show the most origin character.

Medium roast for all-round use

Let development run a little longer after first crack. The acidity softens, the nut and chocolate notes come forward and the body gets rounder. Most people who buy one bag to try end up liking this level for both cafetière and pour-over.

Medium-dark for espresso and milk drinks

Push towards the start of second crack, but stop before oils cover the surface. You trade some brightness for weight and sweetness, which holds up well in milk. If you want more body and crema in an espresso blend, many roasters add a share of our robusta green coffee beans.

A few practical roasting tips

  • Weigh green and roasted beans so you can track weight loss. It is a simple, repeatable way to compare batches.
  • Dense, high-altitude coffee often likes a confident start, then a gentler finish so the outside does not run ahead of the inside.
  • Cool the beans fast once you drop them. Slow cooling keeps them cooking.
  • Let the roast rest. Most washed coffees taste better after 24 to 72 hours.

Moisture, Grading and What to Check When the Bag Arrives

Moisture tells you a lot about how a green coffee was dried and stored. Cropster's green grading guide notes that the standard allowable moisture content according to the SCA is 10–12%, and that readings well outside that range can affect quality over the following months. The FAO's reference annex on green coffee classification and grading sets out how defects and moisture are counted for specialty grades.

Our listed figure for this lot is below 13%. If you need the exact reading for the bag you are buying, ask us before you order and we will tell you what we have. When your washed arabica green coffee beans arrive, it is worth a quick check:

  • Smell the beans. Clean, grassy or hay-like is normal. Musty or sour is not.
  • Look at colour. Washed coffee is usually an even blue-green to grey-green.
  • Pick through a handful for broken, black or insect-damaged beans. A few is normal for hand-sorted coffee; lots is not.

You can read how we handle sorting and lot checks on our quality policy page.

Storing Washed Arabica Green Coffee Beans So They Stay Good

Green coffee keeps far longer than roasted coffee, but it still ages. Heat, humidity and big swings in temperature are what spoil it. Research from Purdue University on hermetic storage bags found they held green coffee quality steady in a humid climate compared with traditional jute sacks (Donovan, Purdue University, 2018). A University of California study reached a similar conclusion: hermetic packaging kept moisture more stable than jute alone (UC eScholarship).

At home or in a small roastery, that comes down to a few simple habits:

  • Keep the beans somewhere cool, dry and dark, away from ovens, radiators and windows.
  • Reseal the bag after each use, or move the beans into an airtight food-grade container.
  • Keep them off concrete floors and away from strong smells. Green coffee picks up odours.
  • Buy in amounts you will roast within a few months. That is one reason we offer six bag sizes.

If you have more questions about freshness and harvest timing, our FAQ page covers how we plan procurement around recent harvests.

Picking the Right Bag Size of Washed Arabica Green Coffee Beans

A rough guide, based on how much people tend to roast:

  • 1kg: for a first try or a side-by-side with another origin.
  • 5kg: for regular home roasting over a month or two.
  • 10kg and 15kg: for small roasters testing a new single origin.
  • 25kg: for a coffee you already know you want on the menu.
  • 50kg: for cafés and roasteries with steady weekly volume.

Prices per kilo drop as the bag size goes up, and you can switch between sizes on this page before you add to cart. If you would like to taste the coffee first, get in touch about a sample and we will send the lot profile with it.

How This Lot Compares With Our Robusta

Arabica and robusta are different species with different jobs. Washed arabica green coffee beans are the ones to buy for brightness, sweetness and clarity. Our robusta is lower in acidity, heavier in body and higher in caffeine, which is why it is popular in espresso blends. Plenty of roasters buy both: arabica as the base, robusta as a smaller share for crema and punch. You can compare them side by side in our best sellers.

If you are curious about why green coffee from this part of Africa is still less common in roasteries, this article on specialty green coffee and the green bean myth go into more depth.

Who Grows This Coffee

Ayaba Coffee was started by a family with a long history in coffee farming, cooperatives and export at origin. We buy our washed arabica green coffee beans from smallholder communities rather than large estates, and we try to keep the chain between farm and roaster short enough that we can answer real questions about the lot. You can read the background on our story page, see more about the growing region on origin and terroir, and find out how we think about farming practice on sustainability.

Questions People Ask Before Buying

Are these beans roasted?

No. These are raw, unroasted washed arabica green coffee beans. You need to roast them before grinding and brewing.

Can I roast green coffee without a proper roaster?

Yes. People roast successfully in a heavy pan, a hot-air popcorn machine or an oven. Results are less even than a dedicated roaster, but it is a cheap way to learn. Roast somewhere with good ventilation, because roasting makes smoke and chaff.

How long will the green beans keep?

Stored cool, dry and sealed, washed arabica green coffee beans keep well for many months. Flavour slowly fades over time, so we suggest buying amounts you will roast within a few months rather than stockpiling.

Is this coffee organic?

It is grown by smallholders using traditional methods, but it is not sold as certified organic. We only use that word when a certificate backs it up.

What is the difference between washed and natural?

Washed coffee has the fruit removed before drying, which usually gives a cleaner, brighter cup. Natural coffee dries inside the whole cherry and tends to be fruitier and heavier. If you want clarity, washed arabica green coffee beans are the safer choice.

Can I order more than 50kg?

Yes. For larger volumes, see our wholesale page or contact us with the quantity, delivery postcode and timeline.

Ready to Roast?

Choose your bag size above and add it to your cart. If you are not sure which size you need, start with 1kg or 5kg, roast a few batches and come back for more once you know how you like it. These washed arabica green coffee beans reward a bit of patience at the roaster, and they make a very good daily cup once you have found your profile.
